  • Step 2: Put the meats together in a large bowl, and later add sugar, paprika, cayenne, garlic, salt, saltpeter, anise seed, ascorbic acid, and red wine.
  • Step 3: Mix the ingredients thoroughly until you know it’s properly mixed.
  • Step 4: On a large pan, spread the mixture and loosely cover it using waxed paper. Place it in the refrigerator and cure it for 24 hours.
  • Step 5: On the second day, prepare your casing by thoroughly cleaning them and cutting them into 4 feet.
  • Step 6: Place the casings in a bowl filled with cold water and leave it for 30 minutes. Ensure there are no breakings on the case as you do it. That is possible by tying a knot on one end and putting water in it to see where it leaks.
  • Step 7: Put the casing once again in a bowl containing water. Add white vinegar in a ratio of one tablespoon to a cup of water. That’s necessary to soften the casing.

  • Step 9: Use cotton twine to make two separate knots at every link. That is, from one sausage to another.
  • Step 10: Using the same cotton twine, tie the center of each four feet sausage and hang them to dry at a temperature of between 50 and 55. Also, ensure a humidity of 75% to 80%. Leave it for eight to nine weeks.
