Here is my favorite crockpot chicken breast recipe using lemon juice and garlic.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Lemon Garlic Chicken Instructions:

  1. Prepare the Chicken: Lightly season the chicken breasts with salt and pepper. Place them in the crockpot.
  2. Mix the Ingredients: In a small bowl, mix the chicken broth, lemon juice, olive oil, minced garlic, oregano, and thyme.
  3. Cook: Pour the mixture over the chicken in the crockpot. Cover and cook on low for 6-7 hours or on high for 3-4 hours. The chicken is done when it is thoroughly cooked through and reaches an internal temperature of 165°F (75°C).
  4. Serve: Transfer the chicken breasts to plates. Spoon some of the cooking juices over the chicken. Garnish with freshly chopped parsley.
